PRODUCT INFORMATION
The product
is the cell wall fraction gained from pure culture yeast of
the species S. cerevisiae. The soluble parts of the yeast
cells are removed by a gentle digestion, the remaining cell
wall fraction is then purified and finally dried. It stands
out for its content of high molecular polysaccharides like
glucans and mannans. The yellowish to brownish coloured powder
with its typical yeast flavour has a high water binding and
emulsifying capacity in different food systems.
